Bratwurst-Potato Skillet Dinner

This was really surprisingly good for such a quick and easy meal. The flavors blended well together and Dave added the mustard on the side. I thought this would serve 4 but Dave was hungry so I stated between 2-4 servings. He kept taking the brats out of the pan while I was cooking. From American Home Town Cookbook made my way.

SERVES 2 -4 (change servings and units)

Ingredients

  • 2 teaspoons extra virgin olive oil
  • 2 medium potatoes, cut in half lengthwise and sliced
  • 4-6 fully cooked bratwursts, cut into bite size pieces (I used Johnsonville)
  • 1 small red onion, sliced
  • 1/2 red pepper, sliced
  • 1/2 yellow pepper, sliced
  • 2 tablespoons teriyaki sauce
  • 1 tablespoon orange juice
  • 1/2 teaspoon dried basil
  • 1/8 teaspoon black pepper (or more)

Directions

    In a large heavy skillet heat the oil over medium heat.

    Cook the potatoes until they are lightly browned and crisp-tender, about 20 minutes turning occasionally.

    Add the bratwurst, onion, and red and yellow bell peppers.

    Stirring occasionally, cook until the vegetables are crisp-tender and heated through, 10-15 minutes.

    Combine the teriyaki sauce, orange juice, basil,and pepper in a small bowl.

    Stir the sauce mixture into the brats and vegetables, and heat through, about 5-10 minutes.

    We served this with Stone Ground Mustard on the side for dipping the brats.

Very good. This is easy to do and had a great flavor. I cooked the bratwurst earlier in the day and didn't take long to do at all.

    What's great about this recipe is that it's a collocation of flavors you otherwise would never put together. I didn't have any teriyaki sauce on hand, so I made some from scratch using Teriyaki Sauce. We will be having this again.

    A very tasty and easy dinner. Next time, I would use more potato, as we really like potatoes. Also, from the time the potatoes hit the skillet, my cooking time was 22 minutes. Some may depend on how thick or think you cut any of the veggies, but I did want to note that. The sauce at the end evaporated before a minute was out, and I viewed it more as a glaze - I might make a bit more of it next time around. My fussy eater ate it and asked for it again - a win, in my book.

    Like you said, this was surprisingly good. Like Lori said, I wish I had more than 5* for this recipe. I used 4 brats (a pkg here), added garlic (a must for me) & also added some mushrooms just because I needed to use them. 2 of us had no prob at all eating all but the last few bites. This is a great 1-dish meal that works on every level, satisfies the meat & potatoes guys, gets veggies into the act & is just downright good! Thx for sharing this sure to be repeated recipe w/us.
