Bran Flax Muffins

Who doesn't need more bran and flax in their diet? The recipe for these tasty, healthy muffins comes from the back of the bag for Bob's Red Mill Whole Ground Flaxseed Meal. They're packed with good things like carrots, oat bran, and flaxseed, along with purely yummy things like apples, raisins, nuts, and cinnamon. To your good health, and your good taste!

Ingredients

Directions

    In a large bowl, mix together flour, flaxseed meal, oat bran, sugar, baking soda, baking powder, salt, and cinnamon.

    Stir in carrots, apples, raisins (if desired), and nuts.
  3. 3
    Combine milk, beaten eggs, and vanilla.
  4. 4
    Pour liquid ingredients into dry ingredients. Stir until moistened. Do not overmix!
  5. 5
    Fill muffin cups 3/4 full. Bake at 350 F for 15-20 minutes.

I like these. My picky kids did not, but that sometimes happens. They do taste healthy, which I like. They have nice texture and moistness. I left off the raisins though I wish I had included them for a little extra sweetness. A nice fall muffin.

    These ae quite possibly THE best muffins I have ever had. The carrots & apples give the moisture that the oil would have. I made 12 large muffins & cooked them for about 25 minutes. Absolutely tender & delicious. And so good for you, too!! I did notice the recipe on my bag of flax meal, too. Thanks for an awesome beakfast! Made fo PAC Fall '08.
