This is a GREAT recipe, and I made it for the first time for 8 guests. There are a lot of steps, so I made it the day before and it tasted MUCH better the next day. Seems like it needed a day for the flavors to "set in". I served it over buttered noodles. Very yummy !! Worth all the work !!

Ok So I RARELY rate anything online but this dish is too amazing not to crow about. Seriously the best thing I've eaten maybe all year. So many steps but worth every little one. Some girlfriends and I made a party around it after watching the Julie and Julia movie. So prep was just part of the fun. I served it over garlic mashed redskin potatoes (skins in).

We saw "Julie and Julia" Saturday and made this Sunday. 1. We couldn't find chunk (slab?) bacon, so we used salt pork instead... worked great. 2. I transferred the stew over to a crock pot for the 3-4 hour simmer time (step 20) because we don't have a/c and it's the middle of summer. Then I transferred it back to the stove top for the rest. It turned out delicious and my kitchen was bearable to make the mushrooms, onions, and mashed potatoes while it was simmering.

My review will not be near as good as what this Beouf Bourguignon was! I bought country bacon, had the butcher cube a swiss steak for me, and this time I used canned beef broth. Sorry Kate, next time will make your homemade stock.
I mixed a bit of the liquid to the tomato paste and herbs to liquify it and pour easier into the beef mixture. The beef fell apart when I pierced with a fork! Served Rita L's Mashed Potatoes With Roasted Garlic and Herbs Mashed Potatoes With Roasted Garlic and Herbs and was in heaven with this meal! Thank you so much Kate!!
