Blueberry Pudding

A nice change of pace from the same old desserts. Warm and comforting, especially for blueberry lovers.

SERVES 6 (change servings and units)

Ingredients

    Preheat oven to 350 and grease a 9-inch pie plate.

    Place blueberries in medium bowl.
  3. 3
    Combine 1/4 cup of the brown sugar and 1 Tbsp.
  4. 4
    of the flour; toss with blueberries to coat.
  5. 5
    Spoon mixture into pie plate.
  6. 6
    In separate bowl, rub remaining 1 cup flour and butter together with fingertips until well blended.

    Mix in remaining 1/2 cup brown sugar.
  8. 8
    Add milk, egg, lemon peel and vanilla, and blend well.

    Pour batter over blueberry mixture.
  10. 10
    Bake until firm and golden brown, about 55 minutes.

    Cool at least 10 minutes before serving.

    Top with whipped topping if desired.

    Very good way to eat our blueberries;they are so good for you. I used frozen berries and I didn't put the lemon rind.Served with low fat ice cream. Thank you for posting. Rita

    Reminds me of a bread pudding only with blueberrys.Excelent blueberry flavor. I did mix it with the mixer and did not have to bake it 55 min, only 35. This has more blueberry flavor than muffins, and is very easy to make.
