Blueberry Oatmeal Muffins

I got this recipe from the blueberry u-pick it farm that we go to every summer. There's nothing like a fresh blueberry muffin.

SERVES 12 , 12 muffins (change servings and units)

Ingredients

TOPPING

Directions

    Preheat oven to 425 degrees.
  2. 2
    Combine oats, flour, 1/3 C sugar, baking powder and salt in a bowl.
  3. 3
    In another bowl, combine milk, egg and oil.
  4. 4
    Add liquid ingredients to the dry ingredients, mix until moist only.
  5. 5
    DO NOT BEAT!
  6. 6
    Fold in blueberries.
  7. 7
    Fill greased muffin cups 2/3 full.
  8. 8
    Mix topping ingredients.
  9. 9
    Sprinkle over muffin batter.
  10. 10
    Bake 20- 25 minutes.

    Serve warm.

Easy and plenty of blueberries. I think it needs the topping though. Made a quick and nice breakfast with things I had in the house.

    These were so easy and so quick to put together! Very, very good muffins. I acctually doubled the recipe and it made 24 regular sized muffins and 9 mini muffins. I used whole wheat flour and replaced the oil with unsweetened applesauce. They are a not too sweet, heavy muffin and they were perfect for a quick breakfast. They would also be easily converted to vegan, which I will be trying the next time. I also think that these would be awesome with apples instead of blueberries, just for a change. Thank you sooo much for this recipe. I will use it often.

    Nummy Blueberry muffins, made these for breakfast, by lunchtime they were gone!! The topping was particulary nice, thanks for sharing!! will be doing these again.

    I omitted the topping and reduced the baking powder to 1/2 Tblsp. They went together quickly and puffed nicely in the oven. Very "oaty" tasting and not too sweet. Good for breakfast or a healthy snack. The batter was really wet and it made more than I could use in the muffin tin (even filling them to the top), but I'll make these again, I'm sure.
