Blueberry Galette

i love this because i can use a prepared pie crust and it's quick to throw together. berries are my favorite part of summer.

SERVES 6 (change servings and units)

Ingredients

    preheat oven to 425.
  2. 2
    line a baking sheet with foil and spray with non stick spray.
  3. 3
    in a large bowl stir together blueberries, cornstarch, lemon zest and juice, 1/2 c sugar, cinammon and salt until combined.
  4. 4
    unwrap the pie dough and unfold onto a baking sheet.
  5. 5
    spoon the berry mixture into the center of the dough, leaving a 1 inch border.
  6. 6
    fold the edge of dough over the berries, pleating.
  7. 7
    dot butter over top of blueberries, brush the pastry with beaten egg.
  8. 8
    sprinkle pastry edge with remaining sugar.
  9. 9
    bake for 25-30 minutes until bubbling.

    garnish with grated zest, if desired.

Just doesn't get any easier than this, I used 2 cups blueberries and 1 cup raspberries, it was like make a pie without any dishes, I served it with some vanilla ice cream, a quick dessert.

    Last Saturday Hubby and I had a craving for blueberry pie, but I didn't have enough blueberries. Your galette recipe fit the bill perfectly! I followed the recipe exactly as written, it was very easy to put together. I was surprised to see that some of the juices ran out over the top of the crust, I'm not sure why that happened. The texture was great, but Hubby and I found the lemon to be a bit overpowering for our tastes. Next time I make it, I will cut the amount of lemon juice and zest from one tablespoon of each to one teaspoon. Thanks again for a new family favorite.

    If I would have realized how easy galettes were, this recipe would never have sat in my cookbook so long. I am not really a fan of baking. I love to cook, but don't tie me to the oven. This recipe made me look like a pro for a casual dinner with friends. Everyone, including my non-fruit eating Hubby, loved this and I absolutely shared the recipe. Hubby was even listing other fruits that would work before the night was over.

    Absolutely delicious! Used unthawed frozen blueberries and it worked out fine. So easy to do using the ready made refrigerated pie crust. Thanks so much, Chia.
