Blueberry Buckle

This has become a favorite with family and friends as a breakfast treat for campouts and special days (like New Years Day!) Enjoy!

SERVES 16 (change servings and units)

Ingredients

    In large mixing bowl, cream together sugar and shortening, then blend in eggs.
  2. 2
    Stir in milk, then sift in baking powder, salt, nutmeg, and cloves. Stir batter til smooth.

    Fold in blueberries. (I usually use frozen blueber ries, and add them into the batter frozen. If you thaw then add, you'll end up with purple cake!)

    Spread batter into a greased and floured 9" x 13" pan.

    For topping, in smaller mixing bowl, blend sugar, flour, and cinnamon.

    Blend in softened butter or margarine, making a struesel-type mixture. Sprinkle crumb mixture evenly on top of batter.

    Place pan in oven preheated to 375 degrees and bake for 1 hour or until buckle tests done when tested with a toothpick (pick inserted and pulled from cake will not come out wet). Blueberry Buckle keeps well and is best served warm.

If you like blueberries, then this is the dessert for you. My family loved it served up with some ice cream or whipped cream. I like mine hot, but you can refrigerate it or serve it at room temperature as well. Good any old way!

    Please check your directions for this recipe. Its obvious, but no mention of adding the 4 cups flour. Another suggestion would be to separate ingredients list into batter and topping section. I've found that cold butter makes the best streusel topping. Thanks!

    I got an itch to try this after getting Blueberry buckle baby food for my son. It was different than I had expected but very tastey. I love bluberries so any new dessert with them is a plus.

    This recipe is absolutely wonderful and very easy to make and it freezes well. You could easly serve a group of 8 -10 people. I added rolled oats for the topping. My family likes it warm or cold. A great snack for little munchkins! Thanks
