Blue Ribbon Banana Cake

This won 1st place in the cakes division at the Mayfest festival. I've made it a couple of times and it is soooo good!! If you let the cake set with the frosting on it for a little while the frosting gets hard and crunchy, i love it that way!!

SERVES 12 (change servings and units)

Ingredients

Creamy Nut Icing

Directions

    Beat eggs, add sugar, butter, bananas, buttermilk, baking soda, baking powder, vanilla, nuts, coconut and flour.

    Mix all together and bake in two 9 x 9 inch round pans at 350 for 35-40 minutes, or until a toothpick inserted near the center comes out clean.

    Remove from oven.
  4. 4
    Let stand 10 minutes before removing from pans to wire racks.

    Cool.

    For Icing:.
  7. 7
    Mix together all ingredients and cook until thickened.

    Pour on cake while frosting is still warm.

This cake was awesome!! I made it into cupcakes and used a caramel frosting (didn't have the cream for the included frosting) and each one was gobbled up! I won't be needing any other banana bread recipes because from now on, this one takes the cake! Ha!

    Frosting never hardened per review. Tasted so-so. Would not make again.

    Cake tasted good - just could not taste the banana. Needs more banana flavor.

    This was a big hit in my ER...gave out 7 copies of recipe. I used a 13 x 9 in pan & baked 28-30 mins. Perfect! Will definately make again. Thank you Courtly!
