Black Bean and Corn Salsa Dip

This is so good! I make this for football parties all the time; usually it is the first to go. This can be made ahead of time and baked right before it's time to eat.

SERVES 6 , 1 dish (change servings and units)

    Spread cream cheese in bottom of 8-in baking dish.
  2. 2
    In a bowl, warm refried beans in microwave for 2-3 minutes, then spread over cream cheese.

    Pour salsa over beans.
  4. 4
    Sprinkle cheese on top.
  5. 5
    Cover and bake 20 minutes. Remove cover and continue baking until cheese melts (about 10 minutes.).

    Garnish with black olives and tomatoes. Serve with tortilla chips.

My oh my, kittymom!!! Made this delightful dish this afternoon when our friends came for a sunday get 2 gather. Rave reviews from everyone including DH who always turns his nose up at black beans, so looks like you've given us another great tasty dish. This little puppy has been sent directly to my appetizer cookbook. I didn't have corn/black bean salsa, so I mixed some canned corn and black beans with our favorite canned salsa, it worked out great. I was also out of olives, but think they would make a nice addition. Made for holiday tag.
