Black Bean Tuna Salad

A quick and healthy tuna salad with a different twist. I put this together for lunch today, just tossing together what sounded good. The flavors came together nicely, I thought, so I am posting the recipe. It was great served in a whole-wheat tortilla.

SERVES 4 -6 (change servings and units)

Ingredients

Directions

    In a medium-sized bowl, flake tuna with a fork; add beans, chiles, onions, and cilantro and toss to combine.
  2. 2
    In a small bowl, stir together remaining ingredients; add to tuna mixture and carefully toss to incorporate ingredients.

    Taste and adjust seasonings, if desired.

Great recipe! I made a few changes, though: Used canned chicken instead of tuna, red bell peppers, white onion & parsley just because I had them on hand. I served it with whole wheat pitas but it was fantastic on it's own and even better the day after. My hubby said it would be great on corn tortillas too. Thanks for posting!

    Yummy! I was trying to use up some things in my fridge so made a few small changes: green onion instead of red, parsley not cilantro (don't have the "cilantro gene" anyway) and added half a jar of pimentos. I also cut the amount of green chilies in half and cut the cayenne way down (about 1/16 tsp). Otherwise, followed the recipe and it was awesome! Will definitely make again. Thanks for posting!

    Yum! I love it when I can put together a meal without heating up the kitchen! I didn't have the chilies and totally forgot to add the cilantro, and I used fat-free Miracle Whip. It was quite good, and very filling. I put it in a whole-wheat wrap with shredded lettuce and a fit of shredded cheddar. Great concoction!

    Hey! This was SO good!!! Made it EXACTLY as is except we ran out of cayenne unbeknownst to us. Anyway, ate this over romaine and it was super satisfying, filling and really, really good. DH loved it, I loved it, and we'll love it again when we make it again really soon. Thanks.
