Bisquick Blueberry Muffins

I love the soft texture the Bisquick gives these muffins. They remind me of the boxed muffins I enjoyed as a child. These can be mixed up faster than it takes for your oven to preheat!

SERVES 9 (change servings and units)

Ingredients

Directions

    Heat oven to 400 degrees.

    Grease muffin pan well.
  3. 3
    Stir all ingredients except blueberries in medium bowl, just until moistened.
  4. 4
    Fold in berries.
  5. 5
    Divide batter evenly in 9 muffin cups.

    Bake 13 to 18 minutes or until golden brown.
  7. 7
    Cool slightly and remove from pan to wire rack.
  8. 8
    Yield: 9 muffins.

As I was mixing these up, I realized I had no milk! Since it was early on a Sat morning, I was afraid of waking my neighbor if I called to borrow milk, so I decided to just use water! I guess the whole milk-water issue had me so shook up, I forgot to add the oil!! They were still very good! I cooked them for 14 minutes and they tasted great!

    These are good and easy to make. I followed the recipe as written other then I used Healthy Heart Bisquick, 2% milk and canola oil as that is what I have at the house. I did add a bit more then 3/4 a cup of fresh blueberries. These aren't a real sweet muffin but we like that. I will be making them again.

    I really liked these muffins and ate them with a spread of butter. I am a Bisquick fan and was not disappointed at all! My 3 yr old enhaled them with me=) I think next time I would add some cinnamon to the batter. Thanks for an easy breakfast this morning! I got 11 muffins out of the batch.

    These were great. I was out of white sugar (!) so quickly substitutde brown sugar, and these turned out fantastic. I sprinkled a little brown sugar on top of each muffin. They baked 16 minutes in my oven, and I got 11 good-sized muffins out of the batter. These have the perfect amount of blueberries - they were really bursting with flavor. Thanks for a quick Saturday breakfast!
