Best Spinach Salad

I love spinach salad and created a recipe that really is Super! .

SERVES 8 (change servings and units)

Ingredients

Directions

  1. 1
    Whisk together mayonnaise, lemon juice, vinegar, garlic, worcestershire sauce, honey and pepper.
  2. 2
    Slowly drizzle in the oil. Set aside. Combine spinach with mushrooms, bacon bits, croutons, cheese and eggs.
  3. 3
    Parmesan cheese is a great alternative.
  4. 4
    Toss with the dressing.

This is a really great salad. I scaled it down to half and we really enjoyed the dressing. Made for ZWT4 for the Tastebud Tickling Travellers.

    Picked those lovely young leaves from the garden - the first of the season. I found the 1 tablespoon of vinegar and 1 tablespoon of lemon juice with the one of honey combined with the rest of the ingredients just right for us . This is a lovely dressing for spinach - it's been added to my salad collection.

    Delicious salad. Tonight we were feeding a vegetarian and a celiac, so we cooked the bacon separately and held off on the croutons until serving. The honey made it a touch too sweet for us (a teaspoon should be enough). Also added some grated romano and parmesan that was on hand. Couldn't bring myself to use all of the oil, but thoroughly enjoyed the salad. Yummo!

    Awesome salad. The dressing is what makes this salad. Loved it. I Ued light Mayo but other than that made the dressing as directed. I left out the mushrooms and boiled egg,and added some fresh garden tomatoes (I just had to, sorry) We really enjoyed this with dinner. Have enough dressing for another salad tomorrow. thanks Sage
