Best Ever Salmon Croquettes

I've been making these for so many years I cant remember where I got the recipe from. I never liked salmon patties until I found this version. Even my picky kids love these!

SERVES 4 (change servings and units)

Ingredients

    Drain salmon, reserving 1/4 cup liquid.
  2. 2
    Remove skin and bones.
  3. 3
    Place salmon in mixing bowl, breaking up into smaller pieces.
  4. 4
    Add egg, mixing thoroughly.
  5. 5
    Stir in flour.
  6. 6
    Blend in potato flakes, onion and pepper.
  7. 7
    Combine baking powder and reserved 1/4 cup liquid.
  8. 8
    Stir into salmon mixture until well combined.
  9. 9
    Form mixture into 24 croquettes (I dont have time to stand there and make that many, I make mine a little bigger, resulting in around 10-12).

    Drop into deep hot oil (375) and fry without crowding for 3-5 minutes or until golden brown on all sides.

    Drain on paper towel.

I love salmon croquettes made with potato. They are so much lighter. This is a good recipe. I replaced the grated onion ( I didn't feel like crying today!) with 1/2 packet of Hidden Valley Ranch Dressing. Yumm... Thanks!

    To make it very low fat, I used 1/4 cup fat free pioneer mix instead of flour, Pam instead of oil and used no baking powder. It turned out PERFECT..!
