I got this at a weight watcher meeting, and I hope it can help someone out! I'm not sure, but maybe sub some of the sugar for splenda or something similar. From www.havecakewilltravel.com.

SERVES 6 , 6 muffins (change servings and units)

Ingredients

Flax Egg

Directions

    Preheat oven to 350*.

    Prepare jumbo muffin tin by spraying with nonstick cooking spray.
  3. 3
    Mix dry ingredients (except chocolate chips).
  4. 4
    Add wet ingredients.
  5. 5
    Do not overmix.
  6. 6
    Fold in chocolate chips.
  7. 7
    Spoon in prepared muffin tin.
  8. 8
    Bake for 20-25 min or until toothpick comes out clean.
  9. 9
    *Variation: Can add 1 cup canned pumpkin and 1 serving of Fiber One Cluster cereal crushed, to bulk up the fiber.
