These are wonderful for just throwing in your favorite ingredients---I don't need any other muffin recipes. Editing to add, based on a recent review: Be sure not to overmix muffins; if you do, they will be tough. They should still be lumpy when you are finished mixing them.

    Preheat oven to 400°F (205°C).

    Stir together the flour, baking powder, salt and sugar in a large bowl.
  3. 3
    Make a well in the center.
  4. 4
    In a small bowl or 2-cup measuring cup, beat egg with a fork.
  5. 5
    Stir in milk and oil.
  6. 6
    Pour all at once into the well in the flour mixture.
  7. 7
    Mix quickly and lightly with a fork until moistened, but do not beat.
  8. 8
    The batter will be lumpy. DO NOT OVERMIX. This will create tough/heavy muffins.

    Pour the batter into paper lined muffin pan cups.

    Variations: Blueberry Muffins: Add 1 cup fresh blueberries.

    Raisin Muffins: Add 1 cup finely chopped raisins.

    Date Muffins: Add 1 cup finely chopped dates.

    Cheese Muffins: Fold in 1 cup grated sharp yellow cheese.

    Bacon Muffins: Fold 1/4 cup crisp cooked bacon, broken into bits.

    Bake for 25 minutes, or until golden.

Great basice recipe....the possiblities are endless. Today I added about a cup of chopped frozen cherries, 1/2 cup of chocolate chips and a tsp of vanilla for Choco-Cherry muffins. They were great. Mine took 20 minutes.

    I made these today with frozen mixed berries and a splash of almond extract. I thought they could use a little more sugar, maybe a full cup instead of 3/4. I still gave it a 5 star review as I know I will repeat this recipe with all the possibilities for muffins: chocolate chip, lemon, blueberry, cinnamon, etc. It's a keeper for sure.

    what a great standard recipe!.I made these and added fresh chopped pears and a little cinnamon.wonderful!i will use this recipe over and over forever.thanks soooooooooo much.

    These really are quite good and very versatile. I made them with blueberries and peaches and they are just bursting with fruit. I like that the fruit is what stands out and not the batter. On saying that..the only thing that makes these 4 stars instead of 5 is that the batter needs a little bit of kick. I added a splash of vanilla and a dash of cinnamon in mine, but I think they could have done with a little bit more. Nothing a little tweaking (because each variation would be different) won't perfect. Just wanted to let others know not to be shy with adding in what you think would taste good because I think it would be hard to ruin these babies. Thanks for a great and easy recipe.
