Best Carrot Cake

I made this cake for Easter, and everone loved it, saying it was the best carrot cake ever.

1 13 inch square cake (change servings and units)

Ingredients

Frosting

Directions

    ----------Cake----------.
  2. 2
    Combine flour, salt, soda,& cinnamon.
  3. 3
    Set aside.
  4. 4
    Combine eggs, sugar,& oil; mix until smooth.
  5. 5
    Stir in flour mixture a little at a time until well blended.
  6. 6
    Stir in carrots, walnuts, pineapple, & vanilla, mixing evenly.
  7. 7
    Pour into a greased 9x13in pan.
  8. 8
    Bake at 350 degrees for 45-55 minutes.

    --------------Frosting----------

    Cream together, cheese and butter until smooth.

    Add vanilla.
  12. 12
    Add sugar a 1/4 cup at a time, until well blended.

    After frosting cooled carrot cake, sprinkle with toasted coconut.

    To toast coconut, put on cookie sheet, under broiler for about 1 minute.

    Keep an eye on it to be sure it does not burn!

    I can't say enough about this cake!! My co-workers BEG me to bake this cake and complain when it's all gone. It's funny watching a group of otherwise civilized folks, elbowing each other to get a slice of my cake. I love it! It's quite a compliment when, rather than not have a taste at all, someone scrapes the crumbs off of your cake plate at the office luncheon. UPDATE: 10/28/2009 I've sold 3 of these cakes for $25 each and I expect more orders with the holidays coming. Thanks, Leslie!

    Exactly what I was looking for. A very moist and dense cake. I probably put more carrots in than it called for and I also added a few raisins. The cream cheese frosting was spectacular and the toasted coconut really added a different twist to our usual carrot cake. I have addopted this as my recipe for carrot cake. O! and I also did what Martha2 did. I put 3/4 cup brown sugar and 1 cup white sugar in it. I do think it realy helps it out.

    I took this to work for a retirement party and I had so many compliments that I thought I should be on a cooking show on TV. I was requested to make it 3 more times in the next 2 months for other occasions. My family loves it and people are still talking about it when they see me. Thanks for the real winner!
