Berry-Smash Muffins (Strawberry Muffins)

These are very easy, fun for kids, and taste great! From The Rainbow Bakery children's cookbook by Gold Medal.

12 muffins (change servings and units)

Ingredients

    Heat oven to 425 F.
  2. 2
    Put a paper baking cup in each of 12 regular-size muffin cups, or grease just the bottoms of 12 muffin cups.

    Slightly smash strawberries in large bowl, using fork.
  4. 4
    Stir in sugar, oil and eggs until mixed.
  5. 5
    Stir in other ingredients just until moistened.
  6. 6
    Spoon batter into muffin cups.
  7. 7
    Bake 15 to 18 minutes or until light golden brown or toothpick poked in center comes out clean.

    Cool 5 minutes.

    Loosen sides of muffins from pan if needed, and take them out of the pan.

    Makes 12 muffins.

    Tip: If you do not have fresh strawberries, you can use frozen strawberries that you have thawed and drained.

My daughter asked me to make these. I used frozen strawberries and part whole wheat flour for the flour. These are very yummy!! It made 12 muffins and 12 mini muffins with one batch. As an option I put in 1/3 cup cocoa powder to make them chocolate. FYI One 16 oz package of frozen strawberries makes 2 cups mashed.

    I used a mixture of fresh strawberries and frozen raspberries/blackberries to make these delightful muffins. I made as written and they turned out perfect. I think the reviews that say there is not enough flavour are due to the quality/flavour of the berry itself. My berries were gorgeous and the flavour came thru wonderfully. Thx for posting!

    I replaced the oil with applesauce, and made the recipe in a square pan, as for a snack cake. Worked great, and got the fat out of it. A real quick, easy, keeper!

    These are so easy to make, it took hardly no time and effort at all. Nice flavour, mine got a little burnt at the bottom though, but that's probably because I'm still getting used to baking in a gas oven! I'll definitely make these again when I want a quick treat and I might also try using different fruit!
