Berry-Smash Muffins (Strawberry Muffins)

These are very easy, fun for kids, and taste great! From The Rainbow Bakery children's cookbook by Gold Medal.

12 muffins (change servings and units)

Ingredients

    Heat oven to 425 F.
  2. 2
    Put a paper baking cup in each of 12 regular-size muffin cups, or grease just the bottoms of 12 muffin cups.

    Slightly smash strawberries in large bowl, using fork.
  4. 4
    Stir in sugar, oil and eggs until mixed.
  5. 5
    Stir in other ingredients just until moistened.
  6. 6
    Spoon batter into muffin cups.
  7. 7
    Bake 15 to 18 minutes or until light golden brown or toothpick poked in center comes out clean.

    Cool 5 minutes.

    Loosen sides of muffins from pan if needed, and take them out of the pan.

    Makes 12 muffins.

    Tip: If you do not have fresh strawberries, you can use frozen strawberries that you have thawed and drained.

Super fast, easy and tasty! I made exactly as directed except that I may have used more strawberries (had some that needed to be used!) and more cinnamon. My kids were eating them almost right out of the oven. I also sprinkled a little sugar on top. Next time I may sprinkle with cinnamon sugar, use applesauce instead of oil (I used canola), and substitue some whole wheat flour in as well. Oh, and I got 15 in a batch but some are smaller.

    Very good and easy to make. My son and I have been picking strawberries so I had a bunch to use up. I made two batches of these and will freeze some. I followed the recipe exactly as written and we all enjoyed them. I have a convection oven so I converted the temperature for my oven and cooked at 375 for 18 minutes. I got 11 muffins from both batches.

    I replaced the oil with applesauce, and made the recipe in a square pan, as for a snack cake. Worked great, and got the fat out of it. A real quick, easy, keeper!

    These are so easy to make, it took hardly no time and effort at all. Nice flavour, mine got a little burnt at the bottom though, but that's probably because I'm still getting used to baking in a gas oven! I'll definitely make these again when I want a quick treat and I might also try using different fruit!
