I just picked some fresh beets from my garden (the kids had planted them) and so I decided to make something they would enjoy.

SERVES 2 (change servings and units)

Ingredients

Directions

  1. 1
    Chop off the roots and stem from the beets and peel.
  2. 2
    Place in saucepan and cover with water.
  3. 3
    Add all other ingredients and simmer for about one hour (or until tender).
  4. 4
    Cool and enjoy. My kids like them diced so I remove from the pan and dice after they have been cooked.

    A nice light approach to "sweet and sour". Did use the smaller measurement of sugar. Was just right for the 7 beets I had from the farmer's mkt. Will fix this again, as it keeps well in the fridge. Thnx for posting, country_cook.
