Beet Salad With Goat Cheese and Walnuts

Combine the strong flavors of beets and goat cheese for a delicious and different salad. Boost the rich flavor of the nuts by toasting them in the oven until golden.

SERVES 2 (change servings and units)

Ingredients

  • 8 1/4 ounces can tiny whole beets, chilled
  • 1 tablespoon snipped fresh basil or flat leaf parsley
  • 1/8 teaspoon ground black pepper
  • 4 tablespoons vinaigrette dressing (bottled reduced-fat or fat-free balsamic)
  • 4 cups mixed baby greens
  • 2 tablespoons coarsely chopped walnuts, toasted
  • 1 ounce semi-soft goat cheese, crumbled (chevre)

Directions

    Drain and cut up beets.
  2. 2
    In a medium bowl, combine cut-up beets, basil, and pepper.
  3. 3
    Drizzle with 2 tablespoons of the salad dressing; toss to coat.

    Arrange greens on 2 salad plates; sprinkle with remaining dressing.

    Top with beet mixture, walnuts, and goat cheese.

Lovely salad! I used golden beets (Dh SWORE he disliked beets until he tried golden beets, which he loved, so I was lucky to find some at the market - and wasn't about to push my luck! I also threw in a few grape tomatoes for some more colour. I used House Balsamic Vinaigrette as the dressing, and we took this to work for lunch and wowed our co-workers! I did roast my own beets, which only enhanced their sweetness and and went so well with the creamy goat cheese and slight sour of the dressing. This is definately one I'll make again, and would be very impressive for company! Made for 1-2-3 Hits Tag - thank you, Annacia, for sharing this recipe - and sorry for the tupperware it's photographed in - it was headed to work!

    We really enjoyed this wonderful recipe. The sweetness of the beets is complimented by the tartness of Basic Vinaigrette and the creamy goat cheese adds the crowning touch. The only change I made was to use toasted pecans in place of the walnuts. Definitely something I will make again.

    These flavors marry so well together. I roasted my own beets and used a homemade vinaigrette for the dressing. Yummy!
