Beef or Chicken Fajitas

This recipe came from our church cookbook. I like this recipe because I can use either chicken or beef. I have tried both and I like the chicken the best. You can leave out the crushed red pepper which is what I do if you don't like your food spicy.

SERVES 8 (change servings and units)

Ingredients

Directions

    Combine the first 7 ingredients to make marinade.
  2. 2
    Slice Chicken or beef into strips.
  3. 3
    Add to marinade and marinate for 2 hours.
  4. 4
    Quickly saute onions and peppers in oil until lightly browned.
  5. 5
    Remove from pan.
  6. 6
    Saute marinated meat about 4 minutes.
  7. 7
    Toss with vegetables.
  8. 8
    Spoon into flour tortillas.
  9. 9
    Serve with avocado slices and sour cream.

I used cubed beef steak and marinated about an hour. Then, sauteed (till soft) an onion and red, green and yellow bell peppers sprinkled with some extra seasoning salt. Threw in the the meat to cook with the veggies and served with a lentil/wild rice blend. It was fantastic. Husband, 1 year old, 2 1/2 year old and myself ate it with enjoyment.

    This is a real winner! I made it with chicken and it was much better than the pre-packaged spice mix that I have used in the past.

    Hi Haileysgrndma, I have prepared your recipe several times and prefer using chicken instead of beef. The marinade is so yummy and flavorful! Thanks for sharing!
