My family enjoyed this....3 yr old it too...will make again. I followed the directions and let it marinate for about 1.5 hrs..cut chicken into chunks and stabbed it with a fork to help the flavors seep in.

Made this last minute for dinner last night - my chicken only marinated for ~20 minutes and the flavors really came together well. I didn't have fresh cilantro, so I substituted dried. Didn't have lime zest, so I used a splash of limeade that was in the fridge. Served this chicken with sweet onion and poblano pepper strips and salsa verde yum. Thanks!

What a really good marinade for chicken fajitas. DS marinated his chicken using the exact ingredients listed in this recipe and very much enjoyed the flavor. DH & I felt it needed a little bit a a kick, so he added 1 tablespoon of cayenne pepper and 1 tsp of chili powder. Very good marinade for chicken to use for fajitas or in a salad. Thanks mysticwish for a keeper recipe for marinading meat! Hope you like the pic of your marinade without any of the additions.

This is definitely a keeper. The marinade smells wonderful while you're making it. I didn't have lime zest so I threw in some lemon slices. I marinated the chicken overnight and then grilled it on a forman grill. It was great!
