Beef and Bean Taco Skillet

This is something I whipped up with ingredients on hand. Very tasty and quick to the table!

SERVES 4 -6 (change servings and units)

Ingredients

Directions

    Brown meat in a large skillet.
  2. 2
    Drain.
  3. 3
    Add taco seasoning, water, corn, beans and chiles to the skillet. Season to taste with salt.

    Bring to a boil.
  5. 5
    Stir in rice.
  6. 6
    Sprinkle with cheese.
  7. 7
    Cover and cook on low heat 5 minutes.
  8. 8
    Serve with crushed tortilla chips, sour cream and salsa, if desired.

I gave this 3 stars. This got mixed reviews in my house. My 6 yr old newphew didn't like it. My 8 yr old niece and 4 yr old newphew ate this right up (even though my niece doesn't like beans). I thought this was ok, it was lacking flavor I think I'll add more taco seasoning next time. My future hubby had 2 bowls and said he liked it. I served ours with additional cheddar, crushed corn chips, sour cream and mild salsa. Overall I'll make this again for sure! Thanks for posting a good recipe! Christine (internetnut)

    Quick and yummy meal! I added some chopped onion when I browned the meat. Mine got pretty dry after I added the instant rice. I had to add another almost 1 cup of water in addition to the 2 cups listed. I topped this with sour cream and cilantro. The kids (especially the "baby" really enjoyed this. Thanx for sharing your creation. I'm sure that I'll make this again; just adding additional liquid.... and maybe even a can of Rotel.

    I'm giving this a five star mainly because it is so budget friendly. Don't get me wrong it taste good to. But when your feeding as many as I do you watch the cost of things. The rice really helps make the dish go a long ways. I think the next time I make this I'll add 1/2 to a whole small onion in when I brown the meat. I will be making this one again!     I thought this was really good. I didn't have ranch style beans, so I substituted a can of rinsed and drained black beans. I also used frozen corn rather than a can. We used tortilla chips to scoop up the mixture. Would have been even better if I had had sour cream and fresh chopped tomatoes on hand!
