This tropical dish can be broiled as well. Be sure to soak the skewers in water before threading the meat and pineapple on. I'll even soak them in the marinade.

SERVES 4 -6 (change servings and units)

Ingredients

Directions

  1. 1
Combine all ingredients, including liquid from pineapple, and marinate, covered and refrigerated, 1-3 hours.
  2. 2
Thread beef and pineapple alternately on metal skewers or soaked wooden skewers. Discard leftover marinade. Grill about 5-8 minutes, turning once, until beef is cooked.

Very good and simple to prepare with items in my pantry. I did not add the lemongrass or scallion. Paired with Sesame Noodles With Napa Cabbage. My DS who has never EVER like teriyaki ate this up like crazy. He even ate the pineapple which he WILL NOT TOUCH. Thumbs up from everyone - we'll be having it again and again.
