Beef Noodle Casserole

Beffy, noodles and cheese The kids really dig into this.

SERVES 6 (change servings and units)

Ingredients

    Brown ground beef, drain.
  2. 2
    Add sauce and next 4 ingredients.
  3. 3
    Bring to a boil.
  4. 4
    Cover and simmer for 5 minutes.
  5. 5
    Combine cottage cheese, sour cream, and green onions.
  6. 6
    Fold in the noodles.
  7. 7
    In greased 3 qt baking dish, layer half the noodles and half the meat.

    Repeat layers.
  9. 9
    Cover and bake at 350* for 35 minutes.
  10. 10
    Uncover, sprinkle with cheese, and bake 5 minutes more.

This is Miss Hulling's recipe for sour cream noodle bake from St. Louis. It's a family favourite of ours. The ingredients sound gross, but somehow it works so well. It's packed full of good protein for the kids. Dee-lish!

    I like the casserole but I would change 2 things. Instead of the green onions I would just put a little yellow onion in with the beef as I browned it. Also, it is very rich and does not need the extra cheese on top. But over all a great taste. It is even great cold as a midnight snack.

    My fussy daughter loved it. Easy to prepare. Some diced green pepper would be a good addition.

    This casserole was really good. I used a 15 ounce can of tomato sauce instead of a 12 ounce.
