Beef Enchiladas

The sauce on these is very rich and full of flavor. Everyone's favorite!

SERVES 4 (change servings and units)

Ingredients

SAUCE

Directions

    Brown ground beef, drain.
  2. 2
    Add next 6 ingredients, mix well.
  3. 3
    Put 1/3 cup filling down middle of each tortilla.
  4. 4
    Wrap, place seam side down in 13x9 baking pan.
  5. 5
    For Sauce: Heat oven to 350 degrees F.

    Saute onion and green pepper in hot oil until tender.

    Add next 4 ingredients, mix well.

    Pour over tortillas.

    Cover and bake 30 minutes.

    Sprinkle with cheese and bake 7 more minutes.

I can't say that this enchilada recipe was the best one I have ever tried, but it is a good one, and it is a bit healthier than some others that I've tried. We definitely enjoyed this, but I found the sauce to be a bit too "tomato-ey" when made as the recipe instructs. I added about a teaspoon of cumin powder and a pinch of ground sage to give the sauce more flavor. I appreciate that this recipe doesn't use any canned soups or sauces.

    Yum!! We loved this casserole - it was delish!! I really like how the cottage cheese adds a creaminess to the recipe, and the enchilada sauce has the perfect flavor and consistency. And, I almost always have everything for this recipe in my fridge & pantry. I follow the recipe exactly except that I add a can of red or chili beans to the meat filling to make it go further. Thank you thank you!!

    I wasn't sure how this would go over with my family, because we're really not cottage cheese fans, but they didn't even realize it was in the recipe! I was also surprised they didn't complain about the black olives, which I love, but they're at best luke warm about. They've asked me to make it again, though, so it's a keeper!

    These were really good. I followed the directions with the exception of adding some cheese to the meat mixture as suggested by one of the other reviews. It wasn't too hot, but just right. Served it with some sour cream and our homemade salsa. Side dish was Green Chili Rice to make for a wonderful dinner. Thanks
