My grandma's recipe. These come out plate size and thin. You put any choice of toppings on and roll up and eat. This is a German heritage recipe.

8 pancakes (change servings and units)

Ingredients

  • 4 eggs, beaten
  • 2 cups milk
  • 1 1/2 cups flour
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon salt
  • 2 tablespoons sugar

Directions

  1. 1
    Mix all ingredients; don't over beat. Mix may have some lumps.

    Heat skillet and melt butter.
  3. 3
    Pour about 1/2 cup mix in circle into skillet and fry until bubbly.

    Turn over and fry until light brown.
  5. 5
    Top with syrup, powdered sugar, apple sauce, nuts, chocolate chips, whipped cream or any such ingredient and roll up.

    Eat in a roll.

    I am eating these as I write this review ... and I am moaning ... so good. The only change I made was to sub flax seed oil for vegetable oil. I filled with a small amount of strawberry jam, cool whip and fresh blueberries. Props to your grandma for a great recipe!! Update: I also made these with soy milk instead of reg and just as good, a bit thicker!

    These fryed up so light, I also added in a teaspoon of vanilla and stuffed them with blueberry filling and topped with whipped cream, we enjoyed this, thanks Cheesehead!...Kitten

    This is a keeper! I made these last night for dinner. My bf has never had 'crepes' before and he GOBBLED them up. I also added a splash of vanilla and filled them with homemade raspberry syrup. I can't wait to try these again with different fillings.
