Posting this for World Tour 2006; this is a great light dinner for 2 or three people and it of course is a wonderful breakfast. Not for the diet conscious by any means :-P

SERVES 2 -4 (change servings and units)

Ingredients

Directions

    In a frying pan, fry the bacon until crisp; remove and drain on paper towel.
  2. 2
    Drain most of the bacon fat from the frying pan, add the butter and saute' the onion until soft.
  3. 3
    Add the potatoes and brown lightly.
  4. 4
    Beat the eggs lightly and add the salt, pepper and milk, and finally the chopped bacon.
  5. 5
    Pour the egg mixture over the onions and potatoes and stir occasionally until cooked.

This is a hearty breakfast, very filling and a great country meal and I halved the recipe. It went together quickly as I pre cooked the potatoes last night and keep cooked bacon in the freezer. I served with toast as suggested and fresh melon. Thanks Janet!

    Ahhh...wonderful comfort food in the morning! I used up left over potatoes for this yummy dish and my husband, my 5 year old and I devoured it. Thanks for a well written, easy to follow and delicious recipe!
