Basil-Walnut Pesto

This is my favorite pesto recipe; rich but healthy due to "good" fats from olive oil and walnuts. It comes from "The Omega Diet." I usually freeze half the recipe for future use.

SERVES 6 (change servings and units)

Ingredients

Directions

    Place basil, olive oil, walnuts, garlic and salt (if using) in food processor.
  2. 2
    Blend until thoroughly combined.
  3. 3
    Add Parmesan and butter (if using) and blend 5-10 seconds more.
  4. 4
    Just before serving, add 2 Tbsp of hot pasta water from cooked pasta.
  5. 5
    Serve over pasta with bread and salad.

I just finished off my garden for the year and had some late basil, and fresh black walnuts in my yard from our walnut tree. I was looking for something to do with them both and thought pesto! I tried this recipe and spiced it up with some red pepper flakes. Tasted great tonight, tomorrow I'm looking forward to some pesto grilled chicken.

    Just like most I tried this recipe because I never have pine nuts around, but always have walnuts. When I first mixed it up it tasted a little bland to me. After sitting a couple hours it perked up though! Just needed time to meld I suppose. Still it needs a little something. Maybe ramano cheese next time for some extra zip. Or a little lemon juice. Either way I'm sure I'll be useing it again. Thanks!

    Perfect & easy. I wanted to make pesto, but only had walnuts & no pine nuts. I ran across this recipe & it was wonderful. I did ad the juice of 1/2 a lemon. I can't wait to make again, thank you for posting.

    Yum! This had a great consistancy and different flavor than the pesto I'm used to with pine nuts. I also added a tablespoon of flax seed to my pesto for some extra nutritional value and two packages frozen squeezed-dry spinach to help my toddler get his veggies. Great recipe!
