Basil Baked Tilapia

Easy recipe to enjoy for a thin, mild tasting fillet, such as tilapia or flounder. This is from our local paper......

SERVES 4 (change servings and units)

    Preheat oven to 450*.
  2. 2
    Pour wine and butter into glass measuring cup and microwave on high until butter begins to melt, about 1 minute.

    Spread basil leaves over bottom of 9 X 13 glass baking dish, reserving a few large ones for the top of the fish.
  4. 4
    Place fillets over the remaining basil.
  5. 5
    Remove the wine mixture from the microwave and add fresh lemon juice.
  6. 6
    Stir or whisk the wine mixture and pour over the fish.
  7. 7
    Season the fish with the salt and pepper.
  8. 8
    Sprinkle the onion powder and bread crumbs evenly over the fish, then add paprika.

    Cover the pan with aluminum foil, place in lower third of preheated oven, for 12 minutes.

    Uncover fish and continue to cook until fish is opaque and flakes easily with a fork, about 2-3 more minutes.

    Serve at once.

This was wonderful. I always have a hard time thinking about what to do with fish so I don't make it often. I will be making this again. DH and I loved it.

    YUM! I just made this for dinner and it was excellent!! I have herbs growing outside so I used basil (not quite as much as listed), fresh parsley and lemon basil. Also had to use white zin. wine since it was all I had...but the results were excellent. The fish was tender and moist and very nicely flavored! I served with a side of pasta but rice would be good as well. This one is a keeper!!

    Everyone I have made this for loves it. I eyeball the ingredients and am very generous with the basil. This is very Good.
