Barley and Bean Salad

I tried this at Costco and decided to make my own version at a fraction of the cost. You can mix up the ingredients to suit your family's taste preferences. I like the colors of the ingredients...very healthy

SERVES 6 -8 , 1 medium serving bowl (change servings and units)

Ingredients

  • 1 cup raw barley, rinsed and cooked

  • 1 (15 ounce) can small white beans, rinsed and drained (or any other beans)

  • 1 (15 ounce) can chickpeas, rinsed and drained
  • 1 medium cucumber, peeled, seeded and chopped
  • 1/4 cup minced red onion
  • 1/2 cup chopped red bell pepper
  • 1 medium carrot, shredded
  • 2 tablespoons fresh parsley, minced
  • 1/2 cup prepared Italian dressing (I used Good Seasons)

Directions

  1. 1
    Mix all together in medium bowl. Serve. Refrigerate leftovers.
