Banana Sour Cream Waffles

Easy banana homemade waffles made richer with the additon of sour cream. Cook time depends on your waffle iron.

SERVES 4 (change servings and units)

Ingredients

Directions

    Sift together dry ingredients and set aside.
  2. 2
    Mix together beaten egg yolk, sour cream, milk, butter and banana.
  3. 3
    Add to flour mixture, mixing well.
  4. 4
    Fold in egg white which has been whipped until stiff.
  5. 5
    Pour into oiled waffle iron and bake until brown.

Very good! I added just a touch of cinnamon and some almond extract, next time I will add vanilla instead. made it in my mixer: I whipped the egg white first then removed it, and used the paddle to mash the banana, then added all wet ingredients then dry. My waffle iron has 1-5 cooking setting, I set it to 2.5 and they came out moist not crispy.. the way I like them.

    My daughter made these for breakfast this morning. They were wonderful. She just happened to have a handful of blueberries around and she added these to the mix. The result: perfection. An excellent recipe. Thank you, Marie for posting!

    I absolutely loved the photo of these waffles, and could hardly wait to wake up and make them. I did substitute plain yogurt for the sour cream. Mine were slightly soft and difficult to get out of waffle iron, but I do find yogurt in general makes a softer product. I loved the mashed banana in it. I pureed the banana so it would not have big chunks. Next time I will double the recipe, since it made about 6, and that's not enough in my house! Roxygirl in Colo.

    Excellent!!! Light, fluffy, full of flavor, and just a perfect delicious Saturday breakfast! I got 6 waffles out of this batter, which is thicker than a lot of waffle batters, but it spreads out well and "fluffs" up as it cooks. These would also be great with a handful of chopped nuts in the batter. I served with a little maple syrup and sliced bananas Thank you!
