Banana Pecan Whole Wheat Mini Muffins

I adapted this from an Old Betty Crocker cookbook. My husband was terribly disappointed when they were all done!

SERVES 36 , 3 dozen mini muffins (change servings and units)

Ingredients

    Preheat the oven to 350°F.
  2. 2
    Spray your mini muffin pans with non stick spray.
  3. 3
    Beat the butter and sugar together.
  4. 4
    Add the egg and mix well.
  5. 5
    Then add the oat bran and mix well.
  6. 6
    In a separate container combine the mashed banana with the 2 tablespoons water.
  7. 7
    Mix the dry ingredients together.
  8. 8
    Add the banana mix to the butter alternatively with the mixed dry ingredients. Mix well.
  9. 9
    Add the vanilla and the pecans.
  10. 10
    Bake for about 15 minutes or until the muffins start to brown.

These are very nice muffins. I didn't have any oat bran so used wheat bran and the texture was perfect. I used splenda and added a little extra for our taste. Very good. Thanks LP

    Excellent mini muffins, mine took only 8 minutes to bake in my air convection oven. I used half and half cream in place of the water and increased the sugar slightly and used raisins in place of nuts. These have a wonderful nutty flavor with an extreme banana flavor! great recipe, thank you ladypit!...Kitten

    Absolutely DELICIOUS! I used 1/4 cup butter & 1/4 cup applesauce, Splenda & omitted the pecans. Baking time was around 15 min. I got so many mini muffins out of just making 1/4 of the recipe-around 15! So the full recipe makes A LOT so be ready to freeze some! Thanks for such a great recipe. Might try adding some mini choc chips next time.
