Banana Nut Bread for the Bread Machine

I got this recipe from my sister-in-law and it is to die for! Banana bread is a long time favorite in my house and this recipe won us all over....even grandma.

SERVES 1 , 1 loaf (change servings and units)

Ingredients

Banana Pecan Bread

Directions

    Into baking pan measure flour, sugar, baking powder, soda, and salt.
  2. 2
    Add oil, eggs, sour cream, and vanilla.
  3. 3
    Insert pan securely into unit; close lid.
  4. 4
    Select"Cake" setting; press"Start.
  5. 5
    "When beep sounds after about 5 minutes, add mashed banana and nuts.
  6. 6
    Press"Start" again.
  7. 7
    The"Complete" light will flash when cake is done.
  8. 8
    (follow your machine's instructions).
  9. 9
    Using hotpads, remove pan from unit.
  10. 10
    Turn bread out onto cooling rack.
  11. 11
    Cool; slice thinly to serve.

    Makes 1 5x4-inch loaf.

    Banana-Chocolate Chip Bread: Prepare bread as above through"Cake" setting.

    When beep sounds, add mashed banana and 1/3 cup chopped chocolate chips.

    Omit nuts.

    Continue as directed.

    Making this for the 2nd time in 2 weeks, so I figured I should weigh in. The first loaf disappeared in minutes! It was that good. Very dense, moist and full of banana flavour. Like Chef Nina, I added 3 large eggs, 1/2 c brown sugar, and 1/2 c white sugar. I also added about a tsp of allspice instead of cinnamon or nutmeg. My bread machine is quirky, at best....I had to start it on "rapid" to get it to mix, but then actually bake it on "cake". It sat in the machine for about an hour before I realized it wasn't going to bake on "rapid", but it came out great anyway! The first time, I didn't have any baking powder, so I increased the baking soda to 1 tsp, and it was fine. It was really delicious, although I only was able to snag a small piece from the kids!!

    Yum, yum, yum, yum! On my bread machine (William-Sonoma) I used the "quick bread" cycle. I also have to set what size bread (1-2pounds) so I did 1 1/2 lb and it came out fine. I've made this twice, once I had sour cream the other I didn't and used vanilla yogurt and it came out great both times. Figure 2-3 bananas if you don't want to "measure". The only "tweaking" I might try the next time would be to add a smidge of cinnamon (but thats' me). This is one of those STAPLES in your cookbook. Somehow there always seems to be leftover bananas. If you don't have two or three bananas at one time. Mash and freeze in a ziplock what you have and when you get another leftover banana or two, just defrost what's in the freezer and add the ones you now have. Another hint is when you measure the dry ingredients (flour sugar, baking soda, powder) measure an extra "set" and keep in a ziplock labelled "banana bread" and when you get those leftover bananas, just put the wet ingredients in your pan (I add the bananas at the start with the wet), then just grab your little baggie with the already measured ingredients and you'll have "time saved". Thanks again. I love when I know I've found "MY RECIPE" for something and the search is OVER!

    This banana loaf was just so wonderful! I am so pleased with the taste and texture that this recipe produced. I made as directed. on my Zojurushi Home Baker bread machine (on the cake cycle of coarse!) only I omitted the chocolate chips, since this was the first time making this recipe, as I wanted to see how this turned out I did however add in the bananas along with all of the other ingredients, I didn't wait the 5 minutes as stated, I used 2 medium-size bananas, and this worked out just fine. Thanks so much for posting, I will make this again in my bread machine...great recipe!...Kittencal
