Banana Curry Soup

Simple African soup. Posted in responce to an ISO reqest.

SERVES 2 (change servings and units)

Ingredients

Directions

    Peel and chop the bananas.
  2. 2
    Melt the butter in a pan and sweat the onion for 5 minutes.
  3. 3
    stir in the curry powder and cook for about 30 seconds.
  4. 4
    Add the stock, bananas, lemon juice and salt to taste.
  5. 5
    Bring to the boil.
  6. 6
    Cover and simmer gently for 15 minutes.
  7. 7
    Process the soup in a blender and stir in the cream.
  8. 8
    Check seasonings and return to the pan.
  9. 9
    Reheat to serve.
