Banana Cream Crepe Filling

This goes well with any crepes or you can use this with Banana Crepes. Cook time is an estimate.

SERVES 6 (change servings and units)

Ingredients

Directions

    Combine flour, sugar, cornstarch, and salt in a small saucepan.

    Add milk gradually.
  3. 3
    Cook, stirring, over low heat until thickened. (Do not rush this stage as it gets rid of the raw flour flavor).

    Blend a little of the hot mixture into egg yolks.
  5. 5
    Stir yolks into saucepan. Cook 1 minute. Remove from heat.
  6. 6
    Add vanilla and butter. Cool.
  7. 7
    When ready to serve fold in diced bananas. Place a small amount of filling on each crepe and roll.

Wonderful recipe, it was very rich and my family loved it. It was quite easy reminds me of lemon meringue. I'm going to try it with strawberries next time.

    This is an absolutely delicious cream filling, it does take some time to thicken but it's well worth waiting for!

    Hubby scraffed the crepes down faster than I could put them together. Really Yummy. I did add a bit more vanilla as Im not big on eggs and I did not want it to have an eggy taste. All was well in the end.=0)

    I did enjoy this recipe and my 2 yr-old ate 2 of them. I think you could use the cream with other fruits also since there isn't any actual banana flavoring until you add the fruit. It did take mine quite a while to thicken on low while stirring. I gradually turned up the heat and then had to leave it for a second and it finally thickened while I was away. I would recommend not stirring constantly to get it to thicken. Also, as it cools, it does thicken on the bottom of the pan, so I would pour to another dish to cool or stir occasionally to keep from doing that. Thanks for a good recipe.
