I don't remember where I took this recipe. I love the addition of marashino cherries :P

SERVES 12 (change servings and units)

Ingredients

  • 2 eggs
  • 3/4 cup sugar (I used 1/2 cup sugar)
  • 1/2 cup vegetable oil or butter, melted
  • 1 cup mashed banana (3 bananas)
  • 1/2 teaspoon almond extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup shredded coconut (mine was sweet)
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup slivered almond, chopped
  • 1/2 cup maraschino cherry, chopped
  • 1/4 cup semi-sweet chocolate chips

Directions

  1. 1
    Put the eggs in a large bowl. Beat until it’s soft and frothy. Add the sugar and oil. Beat well. Incorporate the mashed bananas and the almond extract.

    Put all the other ingredients in another bowl. Stir until combined. Put in the eggs mixture. Stir until combined. Put in 12 greased muffins cups.

    Cook for 30 minutes at 350 F until a tooth-pick inserted in it comes out clean.

ABSOLUTELY OUTSTANDING MUFFINS ~ SOOO SATISFYING! Was gonna share these with my son & DIL, but after the 2 of us consumed 5 of them for breakfast, we decided to finish them off ourselves before the end of the day! Will very happily make many, many more of these in the future! I, too, like subbing applesauce when I can & used some sauce I'd just made ~ Couldn't be better!     These would be delicious with just the almonds and banana - add the other stuff, and wow! I followed others and reduced the sugar (to 6 tablespoons) and subbed applesauce for half of the oil. I also halved the coconut to make it lighter and omitted the maraschino cherries (personal preference). These flavors are great together - very yummy!

    These muffins were DELICIOUS!!! Used a bit less than 1/2 cup of sugar and used 1/4 cup of oil and 1/4 cup of applesauce. Had some white chocolate leftover, so used half white chocolate and half chocolate kisses. The muffins came out moist, tasty and SO GOOD!!! Merci Boomette!! Made for Tag

    Super yummy! I used a little less sugar, apple sauce instead of oil, unsweetened coconut and milk chocolate chips. So much flavour! Will make this again soon!
