These are wonderful little muffins. I always have to have one just out of the oven warm. These are so good.

SERVES 12 (change servings and units)

Ingredients

Directions

    Beat eggs, oil and sugar in a bowl until smooth.
  2. 2
    Stir in bananas.
  3. 3
    Combine dry ingredients and stir into the banana mixture, just until moistened.
  4. 4
    Stir in chocolate chips.
  5. 5
    Fill greased muffin cups (or use cupcake paper liners) 3/4 full.
  6. 6
    Bake at 375ºF.
  7. 7
    for 18 to 20 minutes or until muffins test done.

As a few other reviewers have mentioned, these came out a little dry/tasteless. I used wheat flour [which may have impacted the taste] but otherwise followed exactly. I might play around with the recipe some more to make it work for me. Thanks for sharing it!

    These muffins were SUPER ! turned out very light and moist, and rose very high....loved the banana taste!.....didn't change the recipe at all, made it just as stated.....I am making another batch today, this time, I will throw some frozen blueberries in the batter....thanks BeachGirl for a wonderful muffin recipe

    The best banana muffin recipe I have found so far. The oatmeal adds a very nice texture to what could be an ordinary banana muffin. And of course you can't go wrong with chocolate chips. Thanks for a delicious recipe.
