Banana Buttermilk Pancakes

These banana pancakes are so fluffy and yummy, you won't be able to stop eating them...great with whipped butter. (Note: cook time listed is for each pancake)

3 cups batter (approx) (change servings and units)

    Preheat a griddle or frypan to med-high heat.
  2. 2
    In a large bowl, mix flour, sugar, baking powder, baking soda, nutmeg and salt.
  3. 3
    In another bowl, whisk buttermilk, mashed banana, eggs, melted butter and orange zest (if using); add to flour mixture, stir well until evenly blended Lightly oil griddle or frypan.

    Pour approximately 1/4 cup pancake batter onto griddle, cook about 3 minutes on each side Repeat, until all batter is used up.
  5. 5
    Keep warm in the oven.

    Delicious! Made exactly as written. Didn't have orange zest on hand, so I didn't use it. Thanks for sharing the recipe.

    What a tasty treat on a cold winter morning. I too was lazy and omitted the orange zest, but I replaced it with 1/2 tsp vanilla extract. Mmmmmmmmmmmm

    My family loved these easy to make pancakes. I did not have any buttermilk, so I soured some milk instead. My entire family loved these pancakes. Thanks for the recipe.
