Banana Brunch Cake

I use this recipe a lot with over ripened bananas. I got it out of an electric cooperative newsletter years ago. If I have overripened bananas, I stick them skin and all in the freezer. When I want to make this, I take them out and defrost them in the microwave.

SERVES 12 , 1 pan (change servings and units)

Ingredients

    Heat oven to 350 and grease 13x9 pan.
  2. 2
    Combine Bisquick, 3/4 cup brown sugar, and cinnamon.
  3. 3
    Add bananas, milk, egg, and oil. Mix well.
  4. 4
    Spread into prepared pan. Combine nuts, 1/4 cup brown sugar, and butter/margarine. Sprinkle evenly over batter. (small clumps)
  5. 5
    Bake 30 minutes or until golden brown and toothpick stuck in center comes out clean.

    Cool and enjoy!

Great banana brunch cake. I think next time I’ll double the topping. I made it in 2 cake pans… one for us and one for a friend… always fun to share.

    I made this with whole wheat Bisquick mix & rice milk & it turned out fabulous. Super moist & I love the topping. I think I'll make extra topping next time, as advised here.

    This was very good. Very similar to banana nut bread. We did need to cook it about 10 minutes longer than specified as it was not done yet, but our 9x13's were busy so we used 2 cake pans. Also, The nuts tasted wonderfully pralinish coated with the sugar/butter mixture. Thanks SweetsLady.

    My husband doesn't exactly love banana bread, so I was looking for an alternative. I was especially glad to see this recipe, as I've had it before when SweetsLady made it, and it was delicious! The hubby loved this, so it's a keeper! I don't normally have Bisquick, so I just put together a "homemade" version (with AP flour, salt, baking powder, and Crisco). I also cut the recipe in half, using an 8x8 pan, and it turned out wonderfully! Not as great as when SL made it, but I think it will be better next time around! Thanks for sharing!
