Banana Blueberry Bread

A good way to use up those old bananas. I use frozens ones in my breads.

1 loaf (change servings and units)

Ingredients

Directions

    Oven temp to 350F.
  2. 2
    Sift together flour, sugar, baking powder and salt.
  3. 3
    Stir in oats.
  4. 4
    To the dry ingredients, add eggs, salad oil and bananas; mix until combined.
  5. 5
    Distribute blueberries evenly through batter.
  6. 6
    Turn into greased and floured 8x5" loaf pan.

    Bake 1 hour 10 min.

    Cool in pan 10 min.
  9. 9
    ,remove and cool completely before slicing.

    Yields: 1 loaf.

AMAZING! This bread super good. I used brown sugar and instead of using the 1/3 cup of oil I put half apple sauce and half of the oil. Thank you so much for the recipe

    I picked this recipe b/c of the oatmeal in it. I like that the oatmeal isn't noticeable with the consistency of the bread. The bread isn't "heavy" either. It's not too sweet and not too fattening, which is also a BIG plus. I used 1/2 ww and 1/2 white flour. We all loved it!

    The perfect balance between bananas and blueberries! A really deicious bread for breakfast or dessert. I used frozen blueberries. I used a trick I've read in other recipes - to coat the frozen berries with flour before mixing them in the batter...this keeps them from sinking to the bottom...and as you can see - it works! A keeper recipe for sure.

    I made (10) muffins with this recipe and took them to work. Everyone loved them! I used frozen blueberries and substituted melted butter for part of the oil. I also added a tsp each of oat bran, wheat germ, and orange zest. Very moist and tasty! Thanks for the recipe.
