Balsamic Chicken With Garlic Couscous

From Donna Hay's "Flavours"

SERVES 4 (change servings and units)

Ingredients

For couscous

  • 1 1/2 cups couscous
  • 2 1/4 cups boiling chicken stock
  • 2 ounces butter (I use a non dairy margarine)
  • 4 cloves garlic, sliced
  • 2 tablespoons fresh thyme

Directions

  1. 1
    Place chicken in a shallow dish and pour over the combined vinegar, chicken stock, sugar and garlic.

    Let marinate at least 10 minutes per side.
  3. 3
    To make couscous: pour boiling stock over couscous in a large bowl.

    Cover tightly with plastic wrap and allow to stand for 5 minutes or until all liquid is absorbed.

    Heat butter or margarine over medium-low heat and saute garlic and thyme for about 3 minutes (garlic should be soft but not brown).

    Add the couscous to the pan and stir for 3 minutes.

    To cook the chicken, preheat an oiled frying pan over medium-high heat.

    Cook chicken about 4 minutes per side.

    Add the marinade to the pan and cook for an additional 1 minute per side or until the chicken is cooked through and the marinade has thickened.

    Place couscous and top with chicken and sauce.

I made this for supper tonight. After reading the reviews I was expecting it to be great, but I was disappointed. The chicken was really sweet, and because there was so much sugar from the balsamic (which is already sweet) and the 2 tbsp. of sugar the chicken burned really easily in the pan. The couscous was okay, but I discovered I like my couscous without the garlic.

    This recipe was fantastic! It was the first time I had had couscous and my boyfriend keeps asking when we are having it again. The chicken was quick and tasty. This is a perfect weekday meal and I will probably be making it often, especially the couscous. Thanks for posting a definite keeper!

    What a winner! I followed the recipe almost exactly, just doubling the garlic for both the chicken and the couscous. I didn't find this sweet at all, which I was concerned about as I really hate sweet main dishes, but this was great! Served with spicy roasted potatoes and fried onion, total appreciative silence reigned during dinner! Thanks for a wonderful recipe!

    This was a simple but completely delicious dinner! The chicken was very juicy and tender and a bit on the sweet side because of the balsamic reduction, but still very tasty. For my family's tastes I may add some soy and/or dry wine to cut the sweetness and I also added some sea salt and freshly ground pepper. There is nothing to say about the cous cous except it was just perfect. The fresh time and sliced garlic give the perfect amount of seasoning. Again, simple but perfect flavor. We loved the cous cous so much we did not pour the sauce or chicken on top so as not to dilute its texture and flavor. I also substituted a little olive oil and smart balance spread for the butter in the cous cous and used Splenda instead of sugar for the marinade to make this SBD friendly for us. I know we will make this again and again!
