Balsamic Chicken Thighs with Red Onions

I like using balsamic vinegar in my cooking, and this recipe is no exception: You can substitute chicken breasts, but I'd advise against it — The thighs are higher in fat, but taste much better. Note: Very good over cooked rice.

SERVES 4 (change servings and units)

    Heat the oil in a large, non-stick pan, high heat.

    Cut onion into thin rounds.
  3. 3
    Add 1/4 tsp. pepper and 1/8 tsp. salt.

    Saute, cooking about 5 minutes.

    Reduce to med-high.
  6. 6
    Add chicken, 1/4 tsp. pepper, 1/8 tsp. salt, marjoram and oregano.

    Cook 2 minutes, and then add balsamic vinegar.

    Stir and reduce heat to low, cover, and simmer for 25-35 minutes.

    Cook uncovered for another 2-4 minutes, until sauce has reduced somewhat.

    If you want to garnish the dish, sprinkle with chopped parsley and serve with lemon wedges.

Finally a recipe that doesn't over do it with the ingredients. Just the right amount to make it taste flavorful yet let the taste of chicken shine through. When I eat meat I want to know what kind of meat I'm eating with lots of recipes the ingredients are so overpowering you can't tell sometimes. Thanks for posting this recipe.

    I didn't do the part with the red onions but the chicken was marvelous! My husband even told me it was good before I asked him Sweet and tangy, this is going to be a regular!

    We absolutely loved this recipe! I had been going to make another favourite, but realized it was a long marinating process, so chose this one instead. I'm glad I did! I made it as written, except I didn't have a whole red onion.... used what I had and it was perfect. Now I have at least two tried and true ways to prepare chicken thighs! Thanks Bansidhe!

    Great chicken!! The balsamic gives such a rich flavour and the onions are wonderful! Served it with cole slaw and a stirfry. Delicious supper, thanks for sharing a good one!! will definately be making it again. made it again last night for dinner it was again delicious!!
