Balsamic Chicken Thighs

This is a quick and easy recipe that never fails to please even my picky DDs. Since chicken thighs are usually inexpensive it makes a economical meal. I like to serve these with some type of rice side dish and a green salad.

SERVES 4 -5 (change servings and units)

    Spray large frying pan, preheat.
  2. 2
    Rinse and pat dry thighs.
  3. 3
    Season with salt and pepper.
  4. 4
    Brown well on all sides.
  5. 5
    Cover, reduce heat to medium and cook for approximately 25 minutes,or'til thighs are done depending on size.

    Add shallots,cook for 2-3 minutes,until they soften.
  7. 7
    Stir in balsamic vinegar, cook for about 1 more minute,turn chicken to coat thoroughly.

    Spoon sauce over thighs to serve.

An absolute winner! My husband is not fond of chicken but thinks this is just the best! I have made it several times now & is a firm favourite in our house.

    While the preparation of this was very easy - for my DH and my tastes it was a bit heavy on the balsamic vinegar.

    These were fantastic. I was pretty shocked, to be honest! While I was cooking this up, all I kept thinking was "balsamic and shallots...that's it? Really?" But I was very pleasantly surprised with the very first bite. The balsamic adds so much flavor but isn't overpowering at all, and the shallots add just the perfect amount of texture and flavor. It's also quite possibly the easiest dish to make on the planet. This is one that I wish I could give 10 stars! I'm now going to check out your other recipes to see what other goodies you've got hiding, mickie. THANKS!

    This was THE best simple recipe I have ever tried!!! Word of advice to anyone that wants to make this ... DO NOT substitute the shallots! They make all the difference .. the sweetness they add compliments the Balsamic.. make this for someone you want to impress they will think you spent hours in the kitchen... awesome thanks!
