Balsamic Cashew Pea Salad

This is perfect to take to a picnic during the summer months because it has NO MAYO!!! It is light, sweet and crunchy. I got the recipe at Trader Joe's this morning. Feel free to substitute out balsamic vinegar instead of the vinaigrette. . .we like it that way too!

SERVES 6 -8 (change servings and units)

Ingredients

  • 16 ounces frozen peas (thawed)
  • 1 cup chopped celery
  • 1/2 cup chopped green onion (green & white parts)
  • 1 cup cashew pieces
  • 1/2 cup balsamic vinaigrette (more to taste)

Directions

    Toss together all ingredients.

    Serve chilled or at room temperature.

Incredibly easy, I had everything on hand and this took minutes to put together. I used balsamic vinegar because I am not a 'dressing' lover, I added 'to taste', probably a bit less than 1/2 a cup. Fresh and crunchy, bursting with flavour, we enjoyed this with our supper, and I made the full amount so that I'd able to take it to the office for lunch! This is something that I will be making regularly for my lunches, its marvellous! Thanks, JB! Made for Vegetarian Swap#8, March 09

    I have to agree with Syd, it cant get any quicker, easier or tastier than this recipe and a definate keeper here also!. I used balsamic vinegar and it was just fantastic. I loved the added crunch of the celery and cashew nuts in this salad and with summer coming on, I know this recipe will be on our menu all the time. Thanks JanuaryBride for a great recipe!

    Yummy salad! DH loves pea and nut salads with mayo, so this was a nice healthier change, and he still loved it! I used a white balsamic vinegar instead of the vinaigrette. So good! Thanks January Bride!
