Balsamic Basil Carrots

We really enjoyed this for dinner and I couldn't find a recipe quite like it on recipezaar. This was lovely with ham and a salad. From a Weight Watcher's cookbook. Each serving is 1 point.

SERVES 4 (change servings and units)

Directions

  1. 1
    Peel the carrots and slice them. Put them in a pan with the cup of water. Bring to a boil. Cover and reduce heat. Simmer for about 10 minutes or until soft (but not mushy). Drain and return to the pan.

    While the carrots are cooking combine the other ingredients in a small bowl. Mix well to combine.
  3. 3
    When the carrots are drained add the vinegar mixture and return to the heat. Stir frequently for 2 minutes.

    Serve warm.

I think I would usually rate this a 3 or 4. I didn't think it was awesome, but it was good. Directions were easy. I just don't think my family likes cooked carrots very much, and I served it with Spicy Buffalo Wings (I know, weird choice), so it was definitely overshadowed. I might make this again with a roast or something to get a more accurate picture of the flavor.

    Very tasty! I made this as a side dish with dinner last night and it was very yummy! I will definitely save this recipe for future use. I love coked carrots and it's nice to find a recipe that's not sweet (although I love maple glaze carrots!) Sweet just doesn't go well with everything. This made a great side to a sausage pasta bake & fresh sourdough bread.

    Made this with whole baby carrots. Didn't have any honey, so used a little brown sugar. Now I have honey, will try again, very good.
