definitely use closer to 3 cups corn. If you use canned corn, make sure it is well-drained. I also add about 1/2 tsp of nutmeg to the recipe. Gives it a little dash of color and spice.

This was a pretty good side dish. I will definitely add more corn (I only used 2 cups), salt, and pepper if I make it again, though!

I made this for a family gathering and everyone loved it! It was much better than just plain corn!
