Baked Tilapia With Veggies, Herbs, and Wine

Delicious, fast, easy, and low-fat. What more could you want?

SERVES 2 (change servings and units)

Ingredients

    Preheat oven to 450°F.

    Spray a baking dish (about 11"X7") and arrange filets in a single layer.
  3. 3
    Overlap slightly if necessary.
  4. 4
    Sprinkle with salt and paprika; Set aside.
  5. 5
    In a small skillet, heat olive oil; quickly saute portabello, green onion and yellow pepper, about 2-3 minutes.

    Add sherry and tarragon, and simmer 2-3 minutes more.
  7. 7
    If this mixture is very wet, simmer to reduce another minute or two.
  8. 8
    Spoon contents of skillet over fish.
  9. 9
    Bake@ 450F 20-30 minutes, depending on the thickness of your filets.

Sorry to say this recipe didn't do it for us. Was very bland IMHO. Followed directions exactly except didn't use tarragon cuz I don't like it, but subbed italian seasoning. Maybe the tarragon is the secret ingredient that makes the difference.

    This one is definitely going into heavy rotation! I didn't have enough sherry, so I ended up using some mirin (Japanese sweet rice wine) too. It was outstanding. Thanks!

    Thanks for the great fish recipe..the mushrooms add such a great taste. I've never been big on fish dishes, but now I have a good one I actually like and will make again!!!
