Baked Sweet Potato Fries

An easy, low calorie alternative to French Fries.

SERVES 4 (change servings and units)

Ingredients

Directions

    Spray a 15x10x1-inch baking pan with nonstick coating.
  2. 2
    Scrub potatoes; cut lengthwise into quarters, then cut each quarter into 2 wedges.
  3. 3
    Arrange potatoes in a single layer in pan.
  4. 4
    Combine margarine or butter, salt, and nutmeg.
  5. 5
    Brush onto potatoes.
  6. 6
    Bake in a 450° oven 20 minutes or until brown and tender.

I didn't have any nutmeg so I used a dash of cinnamon. I love these. They turned out nice and tender. Perfect for my 1-year-old to munch on. I'll be making these often.

    Delicious! I used olive oil spray, a dash of Chinese Five-Spice powder, and they were soooo good with a menu of lemon-pesto chicken (tofu for me and steamed French green beans. Adds great color to the plate, as well!

    Mmm! So simple, healthy, and great tasting. Made using cooking spray instead of butter, other than that made as written. Such a healthy alterative to French fries. Thanks so much for the post.

    These were fine from the point of view of flavor - they're sweet potatoes cut in wedges and baked. If you like sweet potatoes, you like them; if you don't, you don't. While there is some difference in texture between these and baked whole sweet potatoes, I didn't feel it was great enough to go to the trouble of cutting up the potatoes and brushing each piece with butter.
