Baked Sweet Potato

This is the BEST way to eat a sweet potato. We have sweet potatoes with our steaks instead of an Idaho. It's a nice compliment to chicken and beef...or any other meat that I can think of! Can also be made on the grill or tossed in the coals if you are camping!

SERVES 4 (change servings and units)

    Preheat oven to 400F.
  2. 2
    Bake yams for 45 to 75 minutes (bigger yams take longer to cook).
  3. 3
    When they are done, the outside will have darkened and the inside will be soft.
  4. 4
    You may see liquid from the potato oozing out and charring.
  5. 5
    When the potato is sliced open, the inside of the skin will be charred black from the caramelizing sugar in the potato.

    This is a perfectly cooked potato.
  7. 7
    Mix the sugar and cinnamon together and set aside.
  8. 8
    To serve, slice a potato down the center.
  9. 9
    Add two Tbs of whipped butter, then sprinkle some cinnamon/sugar over the top.

Yummy, yum, yum! What a nice change of pace from having a regular baked potato with my steak. It was almost like eating dessert. I loved the buttery taste and the sweetness of the cinnamon/sugar mixture.

    As a GRIT (girl raised in the South)sweet potatoes are always in my pantry. Try ginger or cardamom for a twist. I always bake extra as these (w/the carmelized exterior) make the best custard/pudding/pie filling. NOTE: although neither are TRUE yams beware that many times the starchy yellow (yucky) cultivars are sold as "Sweet Potatoes" and the rich, healthy, yummy orange cultivars are sold as "Yams"

    I too use brown sugar and it is delicious. I have just gotten into the habit of microwaving potatoes. Just wrap in plastic wrap, ( don't pierce) and micro 6 minutes per potato. Delicious. My local supermarket sells them pre-wrapped for .69 each and this is where I got the idea to do it myself.
