Baked Spiced Oatmeal

prepare this in the evening- let it sit in fridge overnight and in the morning you'll have a healthy, filling breakfast that smells great when baking! Tastes FABULOUS and healthy, healthy, healthy!(doesn't include overnight refrigeration in cooking/prep times)

SERVES 6 , 1 casserole (change servings and units)

    combine all ingredients in 2 quart casserole dish sprayed with cooking spray. refrigerate overnight. bake at 350 for 30 minutes.

I really liked this. I added more apples and then, after it was finished baking, dusted some sugar on and used a creme brulee torch to give it an extra crunch.

    This was slightly a disappointment for me. I made it for my Dad, but we both found it overly sugary. It reminded me of the instant packaged kind I used to eat when I was younger, which unfortunately wasn't a good thing. However, I did like the combination of spices in it! So, I'd be willing to try it again, but perhaps cut the amount of sugar in half. (I used 1/2 cup white sugar and 1/4 cup brown sugar. Also, almond extract instead of vanilla, because we were out.)

    Very nice baked oatmeal. I cut the brown sugar down to 1 tbsp. and used sucanat (an unrefined sugar). For me, I'll just omit it altogether next time. Though my husband asked me to keep it in! LOL Nice texture and no splenda aftertaste. I loved the apple in it and might include more next time. It did indeed smell divine as it cooked. Thanks for such a good one!

    This was a huge hit. I forwarded the recipe on to several different people. I used 1/4 cup of sugar instead of the splenda and two eggs. Great results!
